INGREDIENTS:
8 Middle size Potatoes,
1 Capsicum (chopped),
1 Middle size Onion (chopped),
5-6 cloves Garlic (paste),
8-9 Mashrooms (chopped),
1 Carrot (chopped),
1 tbsp Paneer (grated),
3 tbsp Cheese (grated),
1/2 tsp Black pepper powder,
1/2 tsp Chaat masala,
3 tsp Kashmiri red chilli powder,
1/2 tsp Roasted cumin powder,
1 tbsp Fresh coriander leaves (chopped),
Salt to taste,
Oil

METHOD:
1. Peel and wash the potatoes.
2. Halve the potatoes and cook in the microwave on high for 1 1/2 minutes.
3. Use a spoon to Scoop out the inner portion of the potatoes leaving a shell all around. Keep the scooped out portions in a bowl.
4. Heat oil in a pan. Put chopped capsicum, chopped onion, carrot, garlic paste and salt into it. Cook the for 1 minute and add chaat masala, red chilli powder, roasted cumin power, paneer, mushrooms, black pepper and coriander leaves. Mix well with a spatula and cook for 2 minutes.
5. Turn off the flame and take the masala into the bowl where the popato pulps are kept. Mix potato pulp well with the masala with a spoon.
6. Stuff the potato shells with this masala mixture - top with grated cheese.
7. Bake in the pre-heated oven for 15 minutes.
Stuffed Potatoes are ready now. Serve hot with chapati, puri, parantha.
