Thandai



Thandai is a cool, refreshing drink prepared with dry nuts and flavored with fragrant spices. This drink is prepared during the festive occasions in India. Thandai tastes best when served chilled.

INGREDIENTS:

Coconut 1 ( grated ),
Sugar 1 cup,
1/2 cup grated Pistachios ( pista ),
1/2 cup grated Cashew nuts,
2 tbsp Melon Seeds,
1/2 tsp Saffron strands,
1/2 tsp Cinnamon Powder,
2 tbsp Saunf powder (Fennel seeds powder),
1 tsp Cardamom Powder,
10-12 pieces Almonds (1/4th cup),
3-4 pieces Black Pepper (freshly ground),
2 tbsp poppy seeds
1 cup Milkmade,
2 tbsp grated Cherry,
Rose petals,
Ice cubes

METHOD:

1) Take 2 tbsp milk in a bowl and soak saffron strands in it. Stir it and set it aside. Soak cashew nuts, melon seeds, poppy seeds and almonds in water for 3/4 hours.

2) To make this drink, all the nuts, and seeds are grounded to their powdered form. So add grated coconut, sugar, soaked cashew nuts, melon seeds, poppy seeds, pista, almonds, saunf powder, cardamom and black pepper into the blender. Blend till it ground well.

3) Combine the prepared powder and milkmade in a deep bowl. Mix well using a whisk. Whisk so that no lumps remain. Add saffron flavored milk. Allow it to sit an hour so that it can soak in all the flavors. Later sieve it through a strainer, add water and refrigerate this drink for at least 3-4 hours or until chilled.

4) Pour equal quantities of the thandai into individual glasses and garnish with cherry,  grated pista, grated cashew, rose petals and ice cubes. Serve chilled.
