Burmese Fish Curry

This simple classic fish curry is all time favourite of mine. Its an easy, fragrant, healthy and delicious fish curry from Burmese cuisine. Just serve with some hot Jasmine rice and you said,' WOWWW !"

INGREDIENTS

500g Cod fillet( cut into big chunks ),
salt, pepper, 1 tsp turmeric powder,
¾ cup shallots, chopped
6 cloves garlic, chopped
2-inch piece ginger, chopped
¼ cup of vegetable oil
1 stalk lemongrass ( thinly sliced ),
chilies,
1 ½ tsp paprika
3 med. tomatoes ( small chunks ),
1 Tbsp fish sauce,
sugar, 
For garnish: Chopped cilantro

INSTRUCTIONS

1) In a bowl, marinade the fish with salt, pepper and turmeric and leave for five minutes.

2) Blend lemongrass, garlic, ginger and chilies in a blender to make a paste. Add crushed shallots into it.

3) Heat oil in a pan. pour the mixture into the oil. Add salt and saute for a few minutes until the shallots are soft.

4) Add paprika and ½ tsp turmeric and saute for 15 seconds.

5) Now add the tomatoes and fish sauce and stir to mix well. Cover it with a lid and cook for 15 minutes over low flame.let it simmer over low heat until the tomatoes break down into a curry sauce. Add little sugar to balance the taste.

6) When it starts to boil, add the fish. Cover and let the fish simmer on medium-low heat for 15 mins or until the fish is cooked, then turn off the heat. 
Garnish with cilantro leaves and serve hot with jasmine rice.
